I don't feel like reading all the other comments so sorry if it's already been answered. I'll go ahead and say my answer, though. It's because he didn't get his face jacked up until MK3 by one of Shao Kahn's extermination squauds which were centaurs (Motaro as their leader). During MK1 and MK2, Kahn's full assult on Earthrealm hadn't happened yet. Hope that explains it for you, if someone hasn't already.
