Ok, this has probably been asked before, but frankly I don't really care so I'm going to ask again. What is the point in fighting Mileena again in the living forest? I'm just pondering the significance of this fight. (I like when you die and she does a fatality to you though)

I think the only "point" to it is actually doing it. The fight, like Kano's or Ermac's don't directly effect the game's plot it's just a fun extra for those willing to look for them.

We don't see the end of that fight, so I assume Kitana killed Mileena at the other end of the portal, then got owned by Shao Kahn's army and locked up in the Arena.
